Standardise the work. Portion variance, standardised recipes, and prep sheets built from confirmed covers, so the plate is the same on a quiet Tuesday as a full Saturday.

Stock Control and Cost Leak Prevention

Find where the stock actually leaks: receiving, storage and rotation, production, service. Cost the waste, set the pars, and close the gaps for good.

Labour Systems and Performance

Read labour by revenue per labour hour, not by feel. Roster to real demand, cost the over-rostered shift, and pull the biggest number on your P&L into line.
